Our client is a 5-star hotel located at Dhiffushi. A local island close to the International Airport, which can be reached within 45 minutes via speedboat or within 2 hours by ferry. A one-of-a-kind island beach hotel with an infinity pool, roof top restaurant, inhouse wellness & spa center, Kid’s Club, Water sports & dive center and a sunset beach. A brand which has been crafted and designed to provide a unique Maldivian cultural experience. We are hiring a sous chef on behalf of the client.
Responsibilities:
Supervise kitchen staff and ensure smooth workflow during food preparation and service periods.
Ensure all food is prepared and presented according to hotel standards and approved recipes.
Monitor food quality, portion control, and consistency across all kitchen sections.
Ensure strict compliance with hygiene, sanitation, and food safety standards (HACCP where applicable).
Train, guide, and support kitchen team members in cooking techniques and operational procedures.
Menu planning, food costing, and minimizing food wastage.
Oversee proper storage, labeling, and stock rotation of food items (FIFO).
Coordinate with purchasing and store teams on requisitions and quality of supplies received.
Ensure timely preparation and service of food for restaurants, banquets, and special events.
Maintain kitchen cleanliness and ensure equipment is used and maintained properly.
Assist with staff scheduling, duty rosters, and leave planning.
Ensure required kitchen logs, temperature records, and hygiene documentation are maintained.
Report operational matters to management.
Perform any additional duties assigned by the Management.
Requirements:
Diploma or Certificate in Culinary Arts or Professional Cooking preferred.
Minimum 3–5 years of experience in a professional kitchen environment.
At least 1–2 years of experience in a Sous Chef or Senior Chef de Partie role.
Strong knowledge of kitchen operations, food preparation techniques, and hygiene standards.
Ability to lead and motivate a team in a fast-paced environment.
Strong organizational and time-management skills.
Ability to work long hours, including weekends and public holidays.
Excellent communication and teamwork skills.
Ability to work under pressure while maintaining high-quality standards.
Ability to work collaboratively with diverse teams.
Excellent interpersonal and communication skills, especially in English.
